Title: Spiced Apples

Yield: 1 Servings

  *excellent for a garnish
  Around a roast goose.

4 large tart apples 2 tbls. lemon juice 3 cups water 1 1/2 cups sugar 1 tbls. lemon juice cinnamon

Preheat the oven to 375F. Peel, halve and core the apples. Sprinkle immediately with the 2 tbls. of lemon juice. In a large skillet, combine the water, sugar and the remaining lemon juice adn simmer for 5 minutes, uncovered. Add the apple halves and poach them over medium heat for about 10 minutes, or until barely tender, but not soft. Turn them once as they poach. Remove the apple halves with a slotted spoon and arrange, cut side down, in a baking dish. Sprinkle with cinnamon. Over high heat, reduce the syrup in the skillet to 1/2 cup. Pour the syrup over the apples and bake them for about 15 minutes, basting with syrup once, and turning once as the apples cook. Yields 8 apple halves.
